On November 4, 2024, Noah Wynants, sous chef at De Librije, was named European Champion at the Young Chefs Academy.
In this prestigious competition among top young chefs, Noah won with a completely plant-based rendang, prepared exclusively with Dutch ingredients – including eggplant and our own shiitake mushrooms.
This year, on October 26, the World Championship will take place in Milan. There, Noah will compete against chefs from other continents and represent Northern Europe.
I am very pleased – and consider it a great honor – that he uses my shiitake mushrooms in his dishes. All ingredients are brought fresh from the Netherlands.
